Spring Pea Orecchiette Dinner (Print Version)

# Ingredients:

01 - 1 pound orecchiette or other bite-sized pasta
02 - Salt
03 - Olive oil
04 - 1 small onion, peeled and finely chopped
05 - 2 cups fresh shelled spring peas
06 - 4 ounces country ham, thinly sliced
07 - Black pepper
08 - Nutmeg, freshly grated
09 - Cream (optional)
10 - Chives

# Instructions:

01 - Bring 6 quarts of water to boil with 3 tablespoons sea salt (double this amount if using a light, flaky salt).
02 - Add the pasta to the boiling water and stir well to prevent sticking.
03 - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and a few pinches of salt. Sauté until the onion is golden and soft, about 9-10 minutes.
