Slow Cooker Vegetable Stew (Print Version)

# Ingredients:

01 - 1 medium aubergine (eggplant), diced
02 - 1 onion (red or brown), peeled and diced
03 - 1 red pepper, diced
04 - 1 green pepper, diced
05 - 4 large mushrooms, diced
06 - 4 cloves garlic, minced
07 - 250 ml (~1 cup) passata or tomato sauce
08 - 1 tbsp tomato puree
09 - 1 tsp Italian mixed herbs
10 - Salt, to taste
11 - Black pepper, to taste

# Instructions:

01 - Cut the aubergine, onion, red pepper, green pepper, and mushrooms into 1 cm dice. Mince the garlic.
02 - Add the diced vegetables, minced garlic, passata, tomato puree, Italian herbs, salt, and black pepper to the slow cooker. Mix well to combine.
03 - Cook on high for 3 1/2 hours, stirring once or twice during cooking.
