Slow Cooker Lemon Herb Chicken (Print Version)

# Ingredients:

01 - 1.5 pounds boneless skinless chicken thighs or breasts
02 - 4 large yellow potatoes, largely chopped
03 - 1 pound carrots, sliced into 2-inch pieces
04 - 1 yellow onion, sliced
05 - 2 tablespoons olive oil
06 - Juice of 2 lemons
07 - Zest of 1 lemon
08 - 3-4 garlic cloves, minced
09 - 1 tablespoon Dan-O's Italian seasoning
10 - 1 tablespoon Dan-O's Spicy seasoning
11 - Salt and pepper, to taste

12 - Fresh parsley, finely chopped

# Instructions:

01 - Largely chop the potatoes and slice the carrots into 2-inch pieces. Place them into the bottom of the crockpot.
02 - In a small mixing bowl, combine olive oil, zest of 1 lemon, juice of 2 lemons, minced garlic, Dan-O's Italian seasoning, Dan-O's Spicy seasoning, and salt and pepper to taste.
03 - Add chicken thighs to the marinade. Mix until the marinade is evenly distributed. Let sit for 5 minutes.
04 - Place the marinated chicken on top of the vegetables in the slow cooker. Pour the remaining marinade over the top.
05 - Cook on low for 4-5 hours, or until the chicken reaches an internal temperature of 165°F and vegetables are fork-tender. Garnish with fresh parsley before serving.
