Quinoa Tabbouleh with Mint (Print Version)

01 - 2 bunches parsley, washed and de-stemmed
02 - 1 bunch mint, washed and de-stemmed
03 - 4 green onions (scallions), chopped
04 - 1 clove garlic, chopped
05 - 1/2 cup extra virgin olive oil
06 - 1/4 cup lemon juice
07 - 2 medium tomatoes, chopped
08 - 1 cucumber, peeled and chopped
09 - 1/2 cup dry quinoa
10 - salt and pepper, to taste

# Instructions:

01 - Prepare quinoa according to the package directions.
02 - Add parsley, mint, green onions, garlic, olive oil, and lemon juice to a food processor or chop by hand. Process until the herbs are finely chopped.
03 - In a bowl, mix the herb mixture with diced tomatoes, cucumbers, and cooked quinoa. Stir well, season with salt and pepper, and drizzle olive oil on top if desired.
