Falafel Salad with Dressing (Print Version)

# Ingredients:

→ Salad

01 - 2 Persian cucumbers, washed and chopped, or 1 medium English cucumber with seeds removed
02 - 4 cups chopped mixed greens (Iceberg, green leaf lettuce, escarole, Romaine, or Boston lettuce)
03 - 1 cup cherry or grape tomatoes, cut into halves
04 - 1/4 cup diced red onion
05 - 1/4 cup Kalamata olives, whole or pitted and cut into halves
06 - 2 tablespoons fresh chopped parsley

→ Serve with

07 - 6 falafel, cooked
08 - Hummus, as needed

→ Tahini Dressing

09 - 1/4 cup tahini
10 - 1 garlic clove, grated or finely minced
11 - Juice of 1 lemon
12 - 1/4 teaspoon fresh dill, finely chopped
13 - 1/4 teaspoon fresh parsley, finely chopped
14 - Fine sea salt and black pepper, to taste
15 - Water, as needed to thin out
16 - 1 tablespoon maple syrup or any liquid sweetener of choice, optional

# Instructions:

01 - In a bowl or jar, combine the dressing ingredients. Whisk or shake to combine. Taste and adjust seasonings and sweetener if needed. Add water to thin to desired consistency.
02 - In a large bowl, add a bed of mixed greens. Drizzle with some dressing and toss to coat. Top with tomatoes, cucumbers, onions, and falafel.
03 - Sprinkle olives and chopped parsley over the salad. Drizzle with additional dressing and season with salt and black pepper, to taste.
04 - Divide the salad into individual bowls. Serve with additional dressing and hummus on the side.
